These Buckeye Graham Crackers turned out SO delicious! Creamy peanut butter filling sandwiched between graham crackers, dipped in chocolate, and finished with a little flaky sea salt. They’re rich, sweet, and have the perfect combination of crunchy, creamy, and chocolatey in every bite. I refrigerated mine to help the chocolate set, then let them come back to room temperature before serving. They sliced in half beautifully, and that peanut butter center was absolutely perfect. One thing I would change next time? Double the chocolate coating. The original amount wasn’t quite enough to coat all of the sandwiches. ✨ Buckeye Graham Crackers: • 12 graham cracker sheets, broken in half (24 squares) • ¾ cup creamy peanut butter • 4 tablespoons unsalted butter, softened • 1¼ cups powdered sugar • ⅛ teaspoon salt • 1 teaspoon vanilla extract Chocolate Coating: • 3½ cups chocolate chips • 4 tablespoons coconut oil Optional: • Flaky sea salt for topping Instructions: 1. Break graham cracker sheets in half and place 24 squares on a parchment-lined baking sheet. 2. In a mixing bowl, combine peanut butter, butter, powdered sugar, salt, and vanilla until smooth. 3. Divide filling into 12 portions and place one portion on 12 graham cracker squares. 4. Top with remaining graham cracker squares and gently press to spread the filling. 5. Melt chocolate chips and coconut oil together in 30-second intervals, stirring until smooth. 6. Dip each graham cracker sandwich into the chocolate, coating completely. 7. Place on parchment paper and sprinkle with flaky sea salt if desired. 8. Refrigerate until chocolate is set. For the best texture, allow them to come back to room temperature before serving. Save this one for your holiday trays, cookie exchanges, or anytime you’re craving chocolate and peanut butter together! ❤️ Recipe adapted from Buckeye Graham Crackers by Salt & Baker. I increased the chocolate coating amount so I had enough to fully cover all of the sandwiches. #BuckeyeGrahamCrackers #ChocolatePeanutButter #NoBakeDessert #HomemadeTreats #DeliciouslyBold
