It’s high-protein, veggie-packed, and perfect for busy nights when you still want a proper family meal. Pork mince is such a versatile protein, and I love that ALDI fresh pork is 100% Australian. Serves: 2 large + 2 small (plus leftovers) 1414 calories total 126g protein total 🛒 Ingredients 500g ALDI Ironbark pork mince 1 large brown onion, sliced 1 red capsicum, sliced 1 yellow capsicum, sliced 250g pre chopped veg mix 1 bunch spring onions 100g pak choy 4 garlic cloves, minced 5g ginger, minced 50ml soy sauce 20ml oyster sauce 10g sesame seeds 2 portions vermicelli rice noodles 🍳 Method Cook onion until soft and fragrant. Add pork mince and brown fully. Add garlic + ginger. Stir through soy + oyster sauce until coated. Add capsicum + veg mix, cover briefly to steam. Soak noodles in hot water for 5 mins, drain.
