Add in melted butter and mix till sand-like mixture. 2) Add baking paper in a 9-inch springform pan and spead the cookie crumbs and pack them together (thick bottom and sides). Let the pan chill in the fridge. [Crumble] 1) In a medium bowl, mix in flour, brown sugar, rolled oats and melted butter until it forms a thick crumbly paste. Set aside to cool and firm up. [Apple Topping] 1) In a small pot, mix together sliced apples, brown sugar, cinnamon and cornstarch. On medium-high heat, mix until the apples is soft and fork-tender and the sauce is thick and jam-like. [Cheesecake] 1) Preheat oven to 160c. In a large mixing bowl, add softened cream cheese, sour cream, sugar, vanilla extract, cinnamon and nutmeg. Mix until smooth and creamy. 2) Crack in eggs one at a time, mixing in between. Pour cheesecake mixture into the pan ontop of chilled crust. Add toppings and bake for 65-70 mins until cheesecake is slightly jiggly. (Lay an empty baking pan on the lowest rack to catch any leaks from the cheesecake) 3) Let cheesecake cool completely at room temp and chill in fridge to set for 6 hours or overnight. Remove cheesecake from pan, slice and serve. [Salted Caramel] note: do work fast with the ingredients 1) In a small saucepan, whisk sugar and water over medium-high heat and bring to a boil. (Until sugar is dissolved) 2) Reduce heat to simmer, add in butter and whisk until combined. Mixture will turn deep amber color, remove quickly and add heavy cream and mix till well combined. Whisk in salt. Let it cool before using.
