FILM TO TABLE “TV EDITION” EP 10: Lemon Cakes from House of the Dragon 🍋  Makes about 20 mini cakes  Cake Batter * 1 3/4 cups (225g) all-purpose flour * 1/4 cup (28 g) almond flour * 1 3/4 cups (350 g) granulated sugar * 1 1/2 tsp salt * 1/2 tsp baking soda * 1/2 tsp baking powder * 1 1/4 cups (295 ml) extra-virgin olive oil * 1 1/4 cups (300 ml) whole milk * 3 large eggs, room temperature * 2-3 tbsp finely grated lemon zest * 1/4 cup (65ml) fresh lemon juice  * 1 tsp vanilla extract  Candied Lemons * 2 lemons, sliced thin (about 1/4 to 1/8 of an inch thick with the seeds removed) * 1 cup sugar * 1 cup water * 3–4 sprigs fresh thyme (optional) Instructions 1. Heat sugar and water until the sugar has dissolved. Add lemon slices and simmer for 30–40 minutes until soft and translucent. 2. Remove lemon slices and place onto a parchment-lined baking tray. 3. Add thyme sprigs to the hot syrup and steep until cooled. Strain. 4. Bake lemon slices at 200°F for about 1 1/2 hours until glossy amber and stained-glass-like. 5. Preheat oven to 325°F. Generously grease 2 muffin pans. 6. Whisk dry ingredients (AP flour, almond flour, baking soda, baking powder, salt) together. In another bowl whisk sugar, olive oil, milk, eggs, lemon zest, lemon juice, and vanilla. Add the dry ingredients and whisk until smooth. Do not overmix. 7. Place 1 tsp thyme-lemon syrup and 1 candied lemon slice into muffin cavities. 8. Fill cavities 2/3 full. Bake 18–22 minutes until tops are softly set and cakes remain mostly pale. 9. Cool cakes for 5 minutes in the pan then flip warm - you may need to tap on the pan to release the cakes (I used a non stick muffin pan that I greased with avocado oil spray and they popped right out) 10.
