Note: this is not a “diet”  it’s a lifestyle, and I love making meals SMARTER NOT SMALLER ♥️.  Each portion: less than 500 calories with 51 grams of protein 👏  INGREDIENTS  For the meat:  4 pieces Osso Bucco (veal shanks)  1 tablespoon olive oil salt and pepper  For the vegetables: 2 large onions, finely diced 1 red bell pepper, finely diced 3 carrots, finely diced  5 cloves garlic, sliced salt, to taste 2 tablespoons tomato paste  1/2 head cabbage 🥬 chopped  5 cups broth  1 large yellow potato, diced  fresh dill, for serving DIRECTIONS  1. Sear the meat. Heat olive oil in a large wide pan over high heat. Season veal pieces with salt and pepper. Sear for 2–3 minutes per side until browned. Remove and set aside on a plate. 2. In the same pan over medium heat, add the diced onion, bell peppers, and carrots. Cook for 5–7 minutes, stirring often, until softened. 3. Add the sliced garlic and cook for 1 minute until fragrant. 4. Next add the tomato paste and cook it off. Add in the cabbage, salt, and stir. Now,  nestle the seared osso bucco pieces on top and in between the vegetables. 5. Add unsalted vegetable broth (enough to cover the top) bring to a boil and hen reduce heat to low and simmer for 1.5 hours making sure to gently stir occasionally. 6. After 1.5 hours, add in the peeled and diced potatoes. Cook for another 30 min or until the meat is tender and the potatoes have cooled.  7. Take it off the heat, garnish with dill and enjoy with hot pepper on top or anything you like. You can spoon it into bowls and top with plenty of fresh dill. Best served with crusty bread or over rice. #cabbage #cabbagerecipe
