@itsnormalfood: How to reverse sear a steak: 1. Preheat oven to 250 degrees F. 2. Pat off any excess moisture on the steak. Season with salt and pepper and place on top of a wire rack on a sheet pan. Position your wireless meat thermometer (we use @MEATER and LOVE it. not sponsored) into the thickest part of your steak. 3. Cook in the oven until the internal temperature of the steak reaches 120 degrees F (for medium/medium rare). 4. Right before the steak reaches the desired internal temp, preheat a cast iron or stainless steel pan on your stove. After it’s preheated, drizzle in a little of a high smoke point oil (I use the @getgraza “frizzle” oil). 5. Remove the steak from the oven and immediately sear in the pan for 45 seconds on each side. 6. Immediately cut the steak and serve.
