I just got back into town and realized the fridge was EMPTY and the girls needed lunches and dinners for a busy week of sports. So as soon as work was over, I ran to the store and we banged out a late-start meal prep! I’ve been seeing caramelized onion chicken pasta everywhere, and since I love anything with caramelized onions, I had to try it. Oh my goodness… even better than I expected. 10/10!! We made a HUGE batch, so cut it in half if you’re not feeding as many as we are! CARAMELIZED ONION & GARLIC CHICKEN PASTA 3 large yellow onions, sliced 2 heads garlic, halved crosswise 4 chicken breasts 4 tbsp olive oil, divided Salt and pepper 2 tsp Italian seasoning 2 tsp paprika 1/2 tsp red pepper flakes, optional 2 lb pasta 1 cup heavy cream 1 cup grated Parmesan, plus more to serve 1-2 cup reserved pasta water Fresh parsley 1. Heat oven to 400°F. Toss onions with 2 tbsp olive oil, salt and pepper in a large baking dish. Drizzle garlic with oil, and add to the dish. Roast 25 minutes, stirring onions halfway. 2. Season chicken with remaining oil, salt, pepper, Italian seasoning and red pepper flakes. Nestle into onions and bake 20–25 minutes, until chicken reaches 165°F. If needed, remove chicken and roast onions and garlic longer until golden and soft. 3. Cook pasta in salted water until al dente. Save 1-2 cups pasta water, then drain. 4. Shred chicken. Squeeze garlic into onions and mash. Stir in cream, Parmesan and ½ cup pasta water. Toss in chicken and pasta, adding more pasta water as needed. Finish with parsley and Parmesan!
