@harka_cooks: 🥢 Fluffy Bao Buns with Sticky Glazed Pork ✨ Soft cloud-like bao, sticky pork, spicy creamy sauce & fresh crunchy toppings… these disappear FAST 🤌🔥 Sticky Pork Marinade • 500g pork loin, thinly sliced (8 pieces) • 3 tbsp hoisin sauce • 2 tbsp Shaoxing wine • 2 tbsp oyster sauce • 4 tbsp light soy sauce • 2 tbsp sugar • 2 tbsp honey • 1 tbsp garlic powder • 2 tsp Chinese 5 spice • 1/2 tsp salt(taste) 1. Reserve some marinade for glazing, then marinate the pork for at least 1 hour. 2. Sear pork in a lightly oiled pan over medium heat until caramelised. 3. Brush with the reserved marinade and cook until sticky, glossy & beautifully charred. Fluffy Bao Buns • 190g lukewarm milk • 1 tbsp instant dried yeast • 1/2 tbsp sugar • 300g flour • 2 tbsp neutral oil • 1 tsp baking powder • Pinch of salt 1. Mix warm milk, sugar & yeast. Let bloom for 10 minutes. 2. Combine flour, baking powder, salt & oil. Pour in the yeast mixture and mix until a dough forms. Rest 10 minutes. 3. Knead for 5 minutes until smooth. Cover & proof for 1–2 hours until doubled. 4. Degas the dough, roll into a log & divide into 8 equal pieces (60–65g each). 5. Roll each piece flat, brush lightly with oil & fold over. 6. Proof covered for 1 hour until puffy. 7. Steam for 12 minutes over boiling water, leaving space for the buns to expand. Spicy Bao Sauce • 4 tbsp Kewpie mayo • 4 tbsp sriracha • Juice of 1 lime • 1 tbsp peanut butter (optional) 🥬 Assemble with sticky pork, spicy sauce, lettuce, pickled ginger (or any pickles), fresh herbs & crunchy veggies.
