Have you tried the viral Costco chicken?? This is my Mediterranean style spin on it that’s such an easy high protein recipe with lots of Mediterranean flavors like fresh herbs, olives, and lemon. For the base, use regular or brown rice, quinoa, kaizen rice, or even chickpeas if you want! I went with a healthier rotisserie chicken option, used my high protein lowcarb kaizen rice, and this is actually such an incredibly easy healthy meal to make in under 20 minutes.  The hardest part is chopping up the veggies and preparing your base. You can use whichever rotisserie chicken you like here, but I went with a better ingredient option. And to make this higher protein and low carb, I used my @Kaizen Food Company high protein lowcarb rice. Kaizen has 20g protein and just 6 net carbs, so it works for me. Here is how I made it: 1.Grab and finely shred or dice up a Rotisserie chicken. Add it back to the bag to be extra, or add it to a bowl. 2.Next, prep your veggies. I finely diced 3 Persian cucumbers, 1/2 large red onion, 1/3 cup black olives, a large handful of fresh mint and parsley. I like lots of fresh herbs. Add on top of your chicken. 3.Next is the base. I cooked up a box of my high protein lowcarb Kaizen rice here, otherwise add 2 cups of any cooked rice or quinoa. 4.For the dressing shake together 1/2 cup 0% Greek yogurt, 2-3 tbsp mayo, 1/2 tbsp olive oil, 1 tbsp mustard, 1 tbsp garlic powder, 1 tbsp finely Chopped parsley, the zest and juice of 1 lemon, and salt and pepper. Shake well, taste, adjust. Then add to the chicken. 5.Close the top of the Rotisserie bag, give it a good shake, then taste & adjust with more sauce, sesame seeds, or anything else you like.
