Ingredients Vanilla Batter • 240 g all-purpose flour, sifted • 1 tbsp baking powder • ½ tsp salt • 1 tsp cornstarch • 60 g brown sugar • 60 g granulated sugar • 115 g unsalted butter (room temperature or melted) • 55 g olive oil • 2 eggs + 1 egg white • 1½ tbsp vanilla extract • ~60 ml milk • ~60 g Greek yogurt Chocolate Swirl Mixture • ⅓ of the vanilla batter • 1½ tbsp unsweetened cocoa powder • 1½ tbsp brown sugar • 1–1½ tbsp milk or cream The chocolate batter should be slightly looser than the vanilla batter. Light Streusel (optional) • 55 g all-purpose flour • 35 g brown sugar • 27 g cold unsalted butter, cubed • Optional: ¼ cup chocolate chips Keep refrigerated until ready to use. Ganache Topping • 100 g semi-sweet or milk chocolate, chopped • 140 ml heavy cream • 10 g butter (optional, for extra shine) Instructions 1️⃣ Prepare the oven and pan • Preheat oven to 330–340°F (165–170°C) • Grease a 9x5-inch loaf pan • Line the bottom and sides with parchment paper 2️⃣ Dry ingredients • In a bowl, whisk together flour, baking powder, salt, and cornstarch ⸻ 3️⃣ Batter base • In a separate bowl, beat butter with brown sugar and granulated sugar • Add olive oil and mix well • Add eggs and egg white • Mix in vanilla extract 4️⃣ Combine • Alternate adding dry ingredients with milk and Greek yogurt • Mix just until combined • Batter should be thick but pourable • If too thick, add 1–2 tbsp extra milk 5️⃣ Divide batter • Remove ⅓ of the batter for the chocolate swirl • Mix it with cocoa powder, brown sugar, and milk/cream until smooth 6️⃣ Swirl assembly 1. Drop large spoonfuls of vanilla batter into the pan 2. Add smaller spoonfuls of chocolate batter 3. Repeat until all batter is used 4. Use a skewer or toothpick to make 2 gentle swirls (do not reach the bottom) 5. Sprinkle streusel on top Do not over-swirl to keep a defined marbled effect 7️⃣ Baking • Bake at 340°F for 45–55 minutes • Check at 40 minutes with a toothpick • If browning too fast, loosely cover with foil • Toothpick should come out clean when inserted into the vanilla section • Turn off oven and leave loaf inside for 10 minutes with the door slightly open 8️⃣ Ganache 1. Heat cream until just before boiling 2. Pour over chopped chocolate 3. Stir until smooth and glossy 4. Add butter if using 5.
