Paalak kofta پالک کوفتہ Ingredients (Kofta): • Chicken breast 350g • Fresh coriander 2 tbsp • Green chillies 2 • Cumin powder ½ tsp • Black pepper ½ tsp • Chilli flakes 1 tbsp • Paprika ½ tsp • Shan kofta masala 2 tbsp • Breadcrumbs 3 tbsp • Onion (small) 1 • Besan 2 tbsp • Ginger-garlic paste 1 tbsp • Salt to taste • Spinach (palak) 2 packs Gravy: • Oil 1 cup • Onion 1 (chopped) • Ginger-garlic paste 1 tbsp • Tomato paste 3 • Tomato puree 2 tbsp • Black pepper ½ tsp • Cumin ½ tsp • Coriander ½ tsp • Red chilli ½ tsp • Salt to taste • Yogurt 3 tbsp • Water 2 cups • Cream 3–4 tbsp Tadka: • Oil • Whole red chillies • Kasuri methi (pinch) • Chilli flakes ½ tbsp • Cumin seeds 1 tbsp Method: 1. Blend kofta ingredients, rest 30 min. 2. Boil spinach 5–7 min, blend. 3. Shape koftas, fry & set aside. 4. Fry onion + ginger-garlic till brown. 5. Add tomatoes, spices & puree; cook till oil separates. 6. Add yogurt + water; boil. 7. Add koftas, cook 10 min (low flame). 8. Add cream, then blended spinach; cook 5–8 min. 9.
