@dr.emily.nutrition: My go-to savoury breakfast that I never get bored of as a PhD Nutrition Scientist 🍳 🥑 🌱 INGREDIENTS: 2 soft-boiled eggs 2 slices of seeded sourdough bread ½ cup (defrosted) edamame beans ½ avocado, cut into small bites Pinch of salt Drizzle of extra virgin olive oil (EVOO) Optional 1-2 basil leaves, chopped Handful of rocket salad to serve Method: Mix the avocado with the edamame beans. Add a drizzle of extra virgin olive oil and pinch of salt. Prep the eggs (I boil them for 5 minutes, but it’s up to your preference). Pile the avo-edemame smash and eggs on top of 2 slices of toasted seeded sourdough and serve with a handful of rocket (drizzled with EVOO) on the side. Optionally top with some chopped fresh basil and an extra sprinkle of sea salt. Nutrition: 28g protein, 14g fibre, 550kcal #healthy #breakfast #nutritionist
