Take the crust dough and transfer it to a parchment lined 9x9 baking pan. Push using your hands, push it out until you have one even layer. Bake the crust at 350F for 20 minutes. Let it cool for 30 mins. 3. For the cheesecake, in a large bowl and with a hand mixer, whip the heavy cream until it has stiff peaks.  4. In a separate bowl, whisk the cream cheese and sugar together until smooth. Add the skyr, lemon juice, and vanilla. Whisk until well combined and no lumps remain. 5. Gently fold the whipped cream into the cheesecake mixture, carefully not to deflate the whipping cream. 6. Remove the parchment paper and baked crust from the pan. Line the cooled baking pan with plastic wrap, ensuring it is covering all sides and has a substantial overhang. Place the crust on the bottom of the pan. 7. Pour and spread the cheesecake over the cooled crust. Smooth to an even layer. Cover with plastic wrap and place into the refrigerator overnight. 8. For the apple pie topping, dice the apples into small chunks. Place into a saucepan along with brown sugar, cinnamon, lemon juice, and salt. Stew on low-medium heat until the apples caramelize. 9. Carefully remove cheesecake from the baking pan, placing it onto a cutting board and gently tearing away the plastic wrap. Pour apples over top, slice in 9 squares and enjoy!
