If you’re struggling with sourdough, start here. This is one of the easiest beginner sourdough loaves, and honestly, probably the kind of loaf most people are actually trying to make. Golden crust. Soft, chewy inside. Simple ingredients. Nothing fancy. For this recipe, you’ll need: 500 grams flour 325 grams water 100 grams active sourdough starter 10 grams salt For this loaf, I used a fermentolyse. That means I mixed the flour, water, and active starter first, then let it rest before adding the salt. This helps the flour hydrate, makes the dough easier to work with, and gives the starter a little head start. But listen, if you’re brand new and you want to keep this as easy as possible, you can absolutely mix everything together at once. Flour, water, starter, and salt. That is totally fine. Once your dough is mixed, cover it and let it rest. Then do 3 to 4 sets of stretch and folds, about 30 minutes apart. Wet your hands, grab one side of the dough, stretch it up, and fold it over. Turn the bowl and repeat on all four sides. After your stretch and folds, let the dough bulk ferment until it looks puffy, softer, and slightly bubbly around the edges. It does not need to fully double. That is where a lot of beginners go wrong. Once it looks airy and alive, shape it into a loaf, place it in a floured banneton or bowl, and cold proof it overnight. The next day, score it, bake it, and get ready for that beautiful crusty sourdough moment. This is the loaf I would make if I had to learn sourdough all over again.
