High Protein Butter Chicken 🍛🔥 This one is unreal for meal prep. Creamy, packed with flavour, high protein, and tastes like a proper takeaway without ruining your calories. Makes 4 portions. Ingredients Chicken Marinade * 900g skinless & boneless chicken thigh fillets * 200g fat free Greek yoghurt * Juice of 1 lemon * 2 tsp garam masala * 1 tsp turmeric * 2 tsp garlic granules * 1 tsp cumin * 1 tsp salt * 1 tsp black pepper Sauce * 1 medium red onion, finely chopped * 4 large garlic cloves, diced * 1 inch piece fresh ginger, diced * 15g lighter butter * 30g tomato puree * 400g vine tomatoes, finely chopped * 150ml light coconut milk * 1 chicken stock cube mixed with water * 20g single cream * Fresh coriander to garnish To Serve * 200g basmati rice (dry weight) Method 1️⃣ In a bowl, add your chicken thighs, Greek yoghurt, lemon juice, garam masala, turmeric, garlic granules, cumin, salt and black pepper. Mix well until fully coated and leave to marinate for at least 20 minutes (longer = better flavour). 2️⃣ Finely chop your onion and tomatoes, then dice your garlic and ginger. 3️⃣ Spray a pan with 1 cal spray and fry the chicken thighs until golden and slightly charred on both sides. Remove from the pan, chop into bite-sized chunks and set aside. 4️⃣ In the same pan, add the butter and let it melt. Add the onion and cook for 2-3 minutes until softened. 5️⃣ Add the garlic and ginger and cook until fragrant. Stir in the tomato puree and cook for another 2-3 minutes. 6️⃣ Add another sprinkle of garam masala, turmeric, garlic granules, cumin, salt and black pepper. Cook the spices out for 1-2 minutes. 7️⃣ Add the chopped tomatoes, coconut milk and chicken stock. Let everything simmer for 2-3 minutes. 8️⃣ Transfer the sauce to a blender and blitz until completely smooth. 9️⃣ Pour the sauce back into the pan, add the chicken back in and simmer for another 2-3 minutes until fully cooked through. 🔟 Finish with fresh coriander and a drizzle of single cream.
