Thinking of Afghanistan with this sinple but delicious #afghanmacaronirecipe inspired dish 1 onion 1 jalapeño 5-6 cloves of garlic 1 carrot 1 tablespoon cumin 1 tablespoon turmeric 1 tablespoon paprika I package of extra firm tofu 3 tablespoons tomato paste 2 tomatoes I can of chickpeas or kidney beans 1/2 cup of Greek yogurt 1 tablespoon dried mint and dill Juice of half a lemon Pasta of choice Sauté veggies in olive oil with salt and pepper until tender. Start cooking tofu with the cumin, turmeric, paprika and salt and pepper in olive oil because that will take some to develop some texture and flavor. Make sure you break it up with your spoon and don’t rush the cooking process. You coule even do this first. Add tomato paste to original pan and cook down for 3 mins (add more oil if needed). Add chopped tomatoes cook for 2 mins. Then add cooked tofu. Add water and adjust salt and pepper. Add chickpeas and let it simmer. Boil pasta Mix yogurt, mint, dill, lemon juice and salt and pepper. Put yogurt on plate first then add your pasta. You can mix your pasta into your sauce and cook it together but this is just how my mom did it, she added the sauce on top of the pasta.
