@catherineebika: Recipe ⬇️ 30 Minute Chicken Penang curry! Ingredients 600g boneless skinless chicken thighs, sliced 1 red pepper, sliced 3 tbsp Penang curry paste 4 garlic cloves, minced 1 thumb sized piece of ginger, minced 400ml full fat organic coconut milk Dutchy @Waitrose & Partners 1 tbsp smooth peanut butter 2 tbsp fish sauce 1–2 tbsp palm sugar or brown sugar 3 kaffir lime leaves 1 fresh lemongrass stalk, lightly crushed 1 fresh lime 1 red or green chilli, sliced (optional) Thai basil or coriander, to garnish 2 bok choy, steamed (optional) 1 chicken stock cube + 50ml water or 3 frozen @boroughbroth bone broth ice cubes Jasmine rice, to serve Add the jasmine rice and water to a saucepan and bring to a boil. Once the water level reaches the rice, cover with a lid and cook over a medium heat for 12 minutes. Turn the heat off and leave the lid on until ready to serve. Meanwhile, place a large pan or pot over a high heat. Add the coconut milk, lemongrass and kaffir lime leaves. Bring to a boil and let it reduce for 5 minutes, stirring frequently. While the coconut milk reduces, mince the garlic and ginger. Add the garlic and ginger to the pot and stir well for 1 minute. Add the Penang curry paste and peanut butter, stirring constantly for 3–4 minutes until fully incorporated and the oils begin to separate slightly. Add the chicken stock cube with 50ml water or the frozen bone broth cubes, followed by the palm sugar, sliced chicken thighs, fish sauce and red pepper. Stir well, cover with a lid and reduce the heat to medium low. Simmer for 8 minutes, stirring occasionally, until the chicken is cooked through. During the final 2 minutes of cooking, steam the bok choy until just tender. Squeeze the juice of one fresh lime into the curry, then remove the lemongrass stalk and kaffir lime leaves. Serve with jasmine rice and bok choy, then finish with sliced chilli and Thai basil or coriander. @OXO Europe steamer basket is so handy for cooking vegetables! @Made In Cookware Sauté pan used to cook the curry! #chickencurry #thaicurry #30minutemeals #chickenrice #easydinnerrecipes

Proof that you can still pick yourself up, even when you’re hanging by a thread. 🥹💪🏼 One thing about me? I’m not afraid to fall. In fact, I might be the best faller I know. 😂 I’ve been fortunate to be naturally athletic, and a lot of physical skills tend to come pretty quickly to me. But NOT all of them. And when they don’t? I have to remind myself that it’s okay to look a little silly while I’m figuring things out. It’s easy to want to be good at something immediately. To get frustrated when your body isn’t doing what your brain is telling it to do. To feel embarrassed when you’re struggling with something that looks so effortless when someone else does it. But there’s something really beautiful about being a beginner. About being in the unknown. About trying something when you have absolutely no guarantee that you’re going to succeed. I fall ALL the time. Literally and figuratively. I’ve fallen out of handstands, off bars, out of relationships, and into situations I had no idea how to navigate. And if there’s one thing I’ve learned, it’s that falling isn’t the opposite of succeeding. It’s part of learning how to succeed. The first attempt here? I’m literally yelling at myself, “GET UP! GET UP!” And then… down I go. 😂 But I tried again. And this time, I got myself up. It wasn’t graceful. It wasn’t perfect. I was fighting for my life on that bar for a few seconds. But I DID IT. And honestly, that’s what I love most about movement. It constantly reminds me of lessons that apply to everything else in life. You don’t have to know exactly how you’re going to get there. You don’t have to look pretty doing it. You don’t even have to believe you’re going to nail it on the next try. You just have to be willing to try again. Get comfortable looking silly. Get comfortable being bad at something. Get comfortable falling. Because the people who get really good at things aren’t necessarily the ones who never fall. They’re the ones who aren’t afraid to keep getting back up. And personally? I’d rather spend my life falling while trying new things than standing safely on the sidelines wondering what I could have done. ❤️ Here’s to trying again, even when we’re hanging by a thread. P.S. Still coming for that muscle-up before the end of the year. 🍦😂 #NeverGiveUp #calisthenics #Gymnastics #ProgressNotPerfection #MuscleUpJourney
