You're getting more intense about it than you use to be 😅 But that's good, ultimately good bbq is about how much enjoyment you and your family get from it. I've cooked some boot leather briskets in my time but when you finally get your technique down and get that really good one that everyone eating it is impressed with is a really great feeling. That's the reason I still do it really, it's a pain in the neck to get up early or stay up late to cook a brisket they'll love on any kind of smoker but when you get a good one and get that reactiin it's worth it.
