When I say I like it dirty… this is what I mean😈 Welcome back to “Single, but cooking like someone’s falling for me tonight.” Who’s hungry?👀  Ultimate Triple Smashed Baconnaise Burger & Loaded Fries Burgers • Brioche burger buns • 500g 20% fat beef mince Baconnaise • 150g mayonnaise • 3 rashers crispy bacon, finely chopped • 1 tbsp bacon fat, 1 tsp Dijon mustard, 1 tsp pickle juice, 1 tsp maple syrup, 1 grated garlic clove, ½ tsp black pepper, squeeze of lemon juice Cheese Sauce • 25g butter • 25g plain flour • 300ml whole milk • 100ml double cream • 180g mature cheddar, grated • 3 American cheese slices • 1 tsp Dijon mustard • ½ tsp smoked paprika • Splash of Worcestershire sauce • Black pepper Method 1. Cook the bacon from a cold pan until crispy. Reserve 1 tbsp bacon fat and chop the bacon into bits. 2. Mix all the baconnaise ingredients together and chill. 3. Melt the butter, stir in the flour, then whisk in the milk and cream. Add the cheeses, Dijon, smoked paprika, Worcestershire and black pepper until smooth. 4. Cook the fries until golden and crispy, then top with the cheese sauce and bacon bits. 5. Divide the beef into 80g balls. On a smoking hot flat grill, smash each patty thin, season with salt and cook until crispy. Flip, add American cheese and cook until melted. 6. Stack three patties onto a toasted brioche bun with baconnaise, pickles, diced onion and extra crispy bacon. Serve with the loaded fries. #smashburgers
