Pineapple Coconut Lime Slushies Welcome back to Dessert on the Dock, a series where I’m sharing refreshing drinks and desserts that are perfect for lake, pool, beach, or any summer gathering. I wanted to include a slushi in this series because I’m always looking for new ways to use my @Ninja Kitchen Creami. I’m officially declaring them as the dessert drink of the summer and they only require 3 simple ingredients. Recipe below, enjoy🍍🥥🍋‍🟩 Makes 1 Pint ~ 2 servings Ingredients: 1½ cups Vita Coco pineapple coconut water, plus more for re-spinning 1 cup Simply Limeade, plus more for re-spinning @Drink Simply ⅓ cup Thai Kitchen canned full-fat coconut milk Instructions: Add the pineapple coconut water, limeade, and coconut milk to your Ninja Creami pint container. Stir until combined. Cover with lid and freeze overnight, making sure the container is sitting level so it freezes flat. Once fully frozen, remove from freezer and allow to sit at room temperature for about 10 minutes. Spin on the “Slushi” setting. It will be powdery. Add a generous splash of more limeade and pineapple coconut water and re-spin until smooth. At this point, the slushi will have the perfect Italian ice style consistency. You can either scoop it as is, or let it sit 5-10 minutes until it becomes more sippable.
