Here I’m cooking a lamb curry along the lines of a dopiaza but with some influences of the French onion soup. You can make a soup/gravy out of blended onions with water and spices and add this to the hot pan as you’re building the curry and it’s really quickly caramelises and adds a ton of depth. I was shown this trick by my friends mum, who was actually born in Punjab!

Random fact, European bay leaves and Indian bay leaves are completely different. Different botanical families. Indian bay leaves come from cinnamon trees and have a different flavour profile
