Boil the potatoes in salted water until soft. Drain well and mash until smooth. 2. Mix in the salt, chicken bouillon, onion powder, garlic powder, smoked paprika, eggs, mozzarella, and Parmesan until fully combined. 3. Line a tray or baking dish with parchment paper. Spread the potato mixture evenly to about 1.5 cm thickness. 4. Chill for 20–30 minutes, then cut into rectangular sticks. Freeze for 1 hour, or until firm. 5. Coat each stick in flour, then beaten egg, then breadcrumbs or crushed cornflakes. 6. Deep-fry in hot oil at 180°C (350°F) until golden brown and crispy. 7.
