It’s sharp, sweet, salty and spicy, with layers of heat, citrus and umami that somehow all work together perfectly. It’s incredibly versatile too, so once you make the dressing, you can pair it with all sorts of proteins. I used lemongrass in both the dressing and butter baste to bring freshness and that really fragrant citrus note through the beef. The toasted rice powder is another key element here - it adds nuttiness, texture and body whilst helping absorb excess moisture so the salad stays crisp. There’s plenty of crushing, grinding and layering of flavours in this one, but if you don’t have a mortar and pestle, a food processor works perfectly well too.
