🇬🇷 Nothing says Greek summer like homemade gemista (Greek stuffed vegetables) A simple meal that tastes even better the next day 🍅🫑 Ingredients: 3 medium-large tomatoes 4 small green peppers 500–700 g potatoes 180–200 g rice 1 large onion (finely chopped) 3 garlic cloves (minced) 1 tbsp tomato paste Flesh and juice from the tomatoes ½ bunch fresh parsley (finely chopped) ½ bunch fresh spearmint (finely chopped) 100 ml olive oil Salt and black pepper A pinch of sugar (for the tomatoes) Instructions: 1. Preheat the oven to 180°C (350°F). 2. Slice the tops off the tomatoes and peppers and remove the inside. 3. Finely chop the tomato flesh, keeping all of the juices. 4. Finely chop the onion and mince the garlic. 5. Finely chop the spearmint and the parsley. 6. Heat half of the olive oil in a pan and sauté the onion for 3–4 minutes. 7. Add the garlic and cook for another minute. 8. Stir in the tomato paste and cook for about a minute. 9. Add the rice and stir well. 10. Add the chopped tomatoes, about half of the tomato juice, the parsley, spearmint, salt and pepper. 11. Cook for 5–6 minutes, until the rice absorbs some of the liquid. 12. Sprinkle a small pinch of sugar inside each tomato. 13. Fill the tomatoes and peppers about three-quarters full. 14. Arrange them in a baking dish. 15. Cut the potatoes into wedges, season with salt and place them between the vegetables. 16. Mix the remaining tomato juice with a little water and pour it over the vegetables. 17. Drizzle the remaining olive oil over the top. 18. Bake for about 1½ hours at 180°C (350°F). 19. Turn the potatoes during the last 20–30 minutes so they brown evenly. 20.
