Jibarito - A sandwich from Chicago, by Puerto Ricans. Super cool little thing, I love the use of fried plantain instead of bread. This gets made with all sorts of fillings now, I’ve seen them with chicken online, even prawns. Ingredients Green plantain - 1 Steak (I used sirloin) - 1 steak (you’ll probably have spare steak) Lettuce - 50g Tomato - 1 Aioli / garlic mayo - 30g Ketchup - 10g Cheese (I used mozzarella, American is popular from what I’ve read) - 1 to 2 slices Adobo (Puerto Rican all purpose) seasoning Salt - 1/2 tsp Onion powder - 1 tsp Garlic Powder - 1 tsp Black pepper - 1 tsp White pepper - 1 tsp Paprika - 1 tsp Cumin - 1 tsp Coriander (ground) - 2 tsp Oregano (dried) - 2 tsp Turmeric - 2 tsp Pantry Neutral oil Salt Black pepper Method Make the adobo seasoning - combine everything well in a small bowl. You can probably buy this too, I also wouldn’t worry too much if you’re missing one or two of the ingredients - this is an all purpose mix so it won’t totally ruin everything. Prep - Slice the tomato, pick your lettuce leaves, peel the plantain and slice in to two roughly equal sized pieces. Pat down your steak and season well with the adobo mix. Prep the plantain ‘bread’ - Deep the plantain pieces in oil for 4 to 5 minutes (or until a knife goes through easily) at 160°C (320°F). Remove from the oil and allow to cool a bit until you can handle them, but still have some heat. Squash them flat using something heavy and flat itself. You want these between half a centimetre and a centimetre thick. Refry at 190°C (370°F) until a little darker, crisp and they hold their shape. Rest on a wire rack and immediately season with salt. Cook your steak - In a hot pan with oil, fry the steak to your preferred done-ness. I like medium for this, but you do you! Rest the steak and slice in to thin strips. Assemble - Plantain, sauce (aioli or garlic mayo mixed with a touch of ketchup - ketchup optional), steak, cheese (optionally melt), lettuce, tomato, more sauce, plantain.
