@hopecrosby_eatss: Vodka chicken parm pasta Ingredients: 2 chicken breast butterflied 50g breadcrumbs - seasoned with garlic & Italian herbs 1 egg 4 slices Mozarella 1 onion 2 tbsp tomato purée 80ml vodka 1 tbsp garlic seasoning 1 tbsp Italian seasoning | salt & pepper 80ml pasta water 200ml double cream 30g Parmesan 140g rigatoni - Butterfly your chicken, dip into the egg and coat in the breadcrumbs until all coated. Repeat for both pieces.Add a generous glug of oil to a pan and fry on a medium/ high heat until golden - this should be 4/5 mins per side. - pop your pasta onto boil - Add the onion to a pan and soften, add in the tomato puree and stir. Then stir through the vodka. Add the seasonings and loosen with some pasta water. Then the heat down and add in the cream, then gently bring up to a simmer. Leave this to simmer for around 10 minutes. - Top the breaded chicken with some of the vodka sauce and top with Mozarella, add to the airfryer for 10 minutes on 180 until golden. - Stir the cooked pasta though the sauce and serve with some fresh parsley. #DinnerIdeas #dinnerinspo #mealideas #mealinspo
