PEACH COBBLER CHEESECAKE TACOS These Peach Cobbler Cheesecake Tacos turn sugar cookie dough into sweet, golden taco shells filled with creamy cheesecake and warm cinnamon peaches. A buttery cobbler crumble on top gives them the perfect finishing crunch. Ingredients For the Sugar Cookie Taco Shells: • 1 package (16.5 oz) Pillsbury refrigerated sugar cookie dough • 2 tablespoons granulated sugar • 1/2 teaspoon ground cinnamon For the Peach Cobbler Filling: • 4 cups peeled and diced fresh peaches, or thawed frozen peaches • 1/3 cup packed light brown sugar • 2 tablespoons unsalted butter • 1 teaspoon ground cinnamon • 1/2 teaspoon vanilla extract • 1 tablespoon cornstarch • 2 tablespoons water For the Cheesecake Filling: • 1 package (8 oz) cream cheese, softened • 1/2 cup powdered sugar • 1 teaspoon vanilla extract • 1 cup heavy whipping cream, cold For the Cobbler Crumble: • 1/2 cup all-purpose flour • 1/4 cup packed light brown sugar • 1/2 teaspoon ground cinnamon • 3 tablespoons unsalted butter, melted Directions 1. Preheat oven to 350°F. Line two baking sheets with parchment paper. 2. Divide the sugar cookie dough into 10 equal pieces. Roll each piece into a ball, then flatten it between sheets of parchment paper into a circle about 4 inches wide and approximately 1/4 inch thick. 3. Arrange the cookie dough circles several inches apart on the prepared baking sheets. Stir together the granulated sugar and cinnamon and lightly sprinkle it over the dough. 4. Bake for 9–11 minutes, until the edges are lightly golden but the centers are still soft. 5. Let the cookies cool on the baking sheet for about 1 minute. While they are still warm and flexible, carefully drape each cookie over a clean, foil-covered wooden spoon handle or another narrow, heat-safe rounded form to create a taco-shell shape. Let cool completely before carefully removing the shells. 6. Make the cobbler crumble. In a small bowl, stir together the flour, brown sugar, cinnamon, and melted butter until coarse crumbs form. Spread onto a parchment-lined baking sheet. 7. Bake the crumble at 350°F for 8–10 minutes, stirring once halfway through, until golden. Let cool completely. 8. Make the peach filling. Add the peaches, brown sugar, butter, and cinnamon to a medium saucepan. Cook over medium heat for 5–7 minutes, stirring occasionally, until the peaches begin to soften and release their juices. 9. Stir together the cornstarch and water until smooth. Add it to the peaches and cook for another 1–2 minutes, stirring constantly, until the peach mixture becomes thick and glossy. Remove from the heat, stir in the vanilla, and let cool completely. 10. Make the cheesecake filling. Beat the softened cream cheese, powdered sugar, and vanilla with an electric mixer until smooth and fluffy. 11. In a separate bowl, beat the cold heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy. 12. Spoon or pipe the cheesecake filling into each cooled sugar cookie taco shell. 13. Spoon the cooled peach cobbler filling generously over the cheesecake filling. 14. Sprinkle the cobbler crumble over the peaches. 15. Serve the Peach Cobbler Cheesecake Tacos immediately for the best combination of crisp sugar cookie shells, creamy cheesecake filling, juicy cinnamon peaches, and buttery crumble.
