Ingredients: - 1 lb (450g) boneless, skinless chicken thighs, cut into chunks - 2 tbsp olive oil - 1 onion, chopped - 3 cloves garlic, minced - 1 zucchini, sliced - 1 red bell pepper, chopped - 2 cups fresh spinach, chopped - 1/4 cup fermented olives, sliced - 1 tsp ground turmeric - 1 tsp paprika - 1/2 tsp cumin - 1/4 tsp chili flakes (optional for heat) - 1 cup cauliflower rice - 2 cups low-sodium chicken broth - Salt and pepper to taste Instructions: 1.
