Ad I’ve teamed up with @Freeggs to bring you a delicious tea/supper that the whole family can enjoy together. You can easily swap the vegetables for your children’s favourites, but trust me, the leeks work so well in this recipe. Chicken, Leek & Bacon Bake 1kg potatoes, peeled and thinly sliced (avoid waxy potatoes) 1 chicken breast, diced into small pieces 4 rashers bacon, diced 4 FREE eggs 300ml milk 200ml double cream 1 leek, finely chopped 2 tsp lazy garlic Handful of fresh rosemary, chopped ½ tsp oregano 60g Parmesan, grated Cheese to top (cheddar, mozzarella, or a mix) Preheat your oven to 180°C and lightly grease a baking dish. Layer in the sliced potatoes, then add the leek, chicken, bacon and Parmesan. In a jug, whisk together the FREE eggs, milk, cream, garlic and herbs. Pour over the potato mixture, making sure everything is evenly covered. Finish with a generous layer of cheese on top. Cover with foil and bake for 1 hour. Remove the foil and return to the oven for a further 15 minutes, or until golden, bubbling and cooked through. Pro tip: For the best results, make sure the potatoes and leeks are sliced nice and finely. It makes all the difference to how evenly everything cooks.
