Chicken gizzards are actually a staple dish you can find in many Bulgarian restaurants and homes across the country. You can also easily buy them from the grocery shops to cook at home like many other animal sub-products. They’re part of the kind of traditional Balkan comfort food people grow up eating. Outside Bulgaria, people are usually surprised when they hear “gizzards,” but for many Bulgarians this is real home cooking and a classic menu item. Would you try this traditional Bulgarian dish, or is this your first time seeing chicken gizzards? 👀 HOW TO PREPARE : Clean and boil (for at least an hour, best to use a pressure cooker) some chicken gizzards. They have to be boiled well as they tend to be quite tough if underboiled. Then drain and pat dry. Heat up some oil and fry for 2-3 minutes. Add paprika, dry garlic, pepper, crumbled chicken stock cube and mix. In the end add a knob of butter and mix on low heat for a minute.
