STEWS FROM AROUND THE WORLD Welcome to stews from around the world, a series where I’ll be showing you how to make some of the cosiest and warming stews this winter, from around the world. This is part 4 and today were taking a trip to the Caribbean to make a classic Saturday stew from our home Island of Montserrat 🇲🇸 (2) 800g bone in lamb 1/2 brown onion diced 2 spring onion stalks diced 1/2 red pepper diced 1/2 green pepper diced 2 garlic cloves diced 3 thyme sprigs 1 rosemary sprig 1 knorr stock cube 1-2 tsp all purpose seasoning 1/2 tsp cayenne pepper 1/2 tsp ground cloves 1 tbsp soy sauce 1 tbsp ground black pepper 300ml lamb stock/water 1.5 tbsp ketchup Salt to taste Start by adding some oil to a large cold pot. Add the lamb, cover and turn the heat to medium high, then allow the lamb to spring its own water. After about 40-45 minutes, the lamb will begin to brown, as seen in the video. Once this happens, add the remaining ingredients except the water/stock. Mix well and cover and cook for a further 20 minutes, until the veg is soft. Now pour in the stock and ketchup, then cook partially covered for a further 40 minutes until the lamb is soft. #FoodTok #stew #rice #caribbeanfood #comfortfood
