Chilli Stuffed Peppers 🌶️ 🫑  Serves 4👇🏼 8 Bell peppers (I just used red) 1 large onion 1-2 chillies 2 garlic cloves (or lazy garlic) 500g lean beef mince (5% fat) 1 tbsp tomato puree  1 tinned chopped tomatos Beef stock cube (if you prefer a deeper flavour) Tabasco Salt & pepper 1tbsp oregano 1 1/2 tbsp chilli powder  1 1/2 tbsp cumin powder  1 tbsp smoked paprika 1 tbsp cayenne pepper Chilli flakes (as much as you’d like🌶️) 1 tin of kidney beans 1 packet of rice (I used brown, red and wild rice) Cheddar cheese (a few handfuls🤷🏼‍♀️) Grated Mozzarella  ~ cut the tops off your peppers and take out the middle, add to your air fryer on 170 for 15 minutes, stop if they start to get too charred) ~ chop up onion, chilli and chop the tops of the peppers ~ add to a pan with oil and sauté until translucent  ~ add your garlic and stir, let it cook for a minute ~ add your beef and cook until browned  ~ squeeze in your tomato puree, stir and add your list of seasonings. Stir and cook for a few minutes before adding in your tinned tomato’s ~ if you’re using beef stock add this in now  ~ splash in some Tabasco for an added kick and stir ~ add your kidney beans (rinsed), your cooked rice and stir the sprinkle in your cheddar cheese ( I eyeball this but a couple of handfuls is about right) ~ season with lots of salt and pepper  ~ and your chilli mixture into the peppers (they should be slightly softened) and top with mozzarella cheese ~ airfry on 200 for 5 minutes until golden brown on top ~ serve and sprinkle with parsley, top with chillies if you like some extra spice and enjoy!! 😊  The chilli recipe makes enough for 4 but there was only two of us so we had 2 peppers each and the rest of the chilli for lunch the next day🤤 #stuffedpepper #chilliconcarne
