#falafel with Turkish style #bulgur for dinner! Served with salaata and yogurt of course 😏 Falafel is honestly super easy. This is only my second time making it ever and it came out even better than the first! It just requires you to soak your chickpeas overnight which I forgot to do but my cat woke me up at 2:30 AM so I have her to thank lol 2 cups dried chickpeas soaked overnight (made me about 25 balls) 1/2 Bunch of cilantro 1/2 bunch parsley Jalapeen Palmful of dried dill 5-6 garlic cloves Tsp of cumin Tsp of coriander Tsp of paprika Salt and pep to taste Tsp of baking powder Use the food processor to turn the onion, garlic, herbs, Jalapeen and spices into a nice juicy paste. Put mixture into a bowl. Start blending the chickpeas but you don’t want them to be too fine and make sure you’ve dried them very welll. I did mine in two batches making sure to move the garbanz around to get an even ground. Combine the herb mix and chickpeas and then add the baking powder. Taste, adjust, and refrigerate while you make your rice or for an hour or so. If the mixture is too wet add some chickpea flour. Try to form a ball in your hand and feel the texture and stability. It will firm up slightly once refrigerated. Roll into balls, press into sesame seeds if you want and fry until golden on both sides. Turkish bulgur! My favorite! 2 cups coarse bulgur 1 yellow onion 1 red bell pepper 1/2 Jalapeen 3 cups water 1 tablespoon tomato paste 1 tablespoon red pepper paste 1 tablespoon butter Sautee your onion, bell pep, Jalapeen in olive oil and with salt and pepper until tender and slightly golden. Then add the pastes and cook for a couple of minutes. Add your washed bulgur and give it a toss and then add 3 cups of hot water. 1.5 cups of liquid per cup of bulgur. Let it come to a boil with the lid uncovered and then cover, turn the heat to medium and cook for 10 mins. All the water should be gone and the bulgur should be tender. If there’s still water continue cooking, if the waters gone and the bulgur is still hard add water and cover again. Once the boxes are checked, turn the heat off and leave it covered. I put a towel to catch some moisture. And enjoy! 💋
