Ingredients: - 1 cup quinoa (uncooked) - 1 cup canned black beans, drained and rinsed - 1 cup assorted vegetables (bell peppers, zucchini, red onion), chopped - 2 chicken thighs, boneless and skinless, sliced - 2 tablespoons olive oil - Salt and pepper to taste - For the Smoky Chipotle-Tomato Sauce: - 1/2 cup tomato sauce - 1 chipotle pepper in adobo sauce, minced - 1 teaspoon smoked paprika - 1/2 teaspoon cumin - For the Lemon-Herb Yogurt Sauce: - 1/2 cup Greek yogurt - Juice of 1 lemon - 1 tablespoon chopped fresh cilantro or parsley - Salt to taste Instructions: 1. Cook quinoa according to package instructions. Fluff and set aside. 2. Preheat oven to 400°F (200°C). Toss chopped vegetables with 1 tablespoon olive oil, salt, and pepper. Roast for 20-25 minutes until tender. 3. Season sliced chicken thighs with salt and pepper. Heat 1 tablespoon olive oil in a skillet over medium-high heat.
