If you used 3 coats it should look better than it does. The roller is your problem. Apply the mud directly to the wall. It’s back breaking work but your results will be better. These are my credentials:

use a grout sponge and water to wet sand the first 2 coats then dry sand the top/finishing coat. Will cut the dust way down. I did my whole house too

Everyone who is saying the time and money trade off isn’t worth it, isn’t taking into account all of the factors. You got to learn, be a big part of why your environment looks the way you want it, practice a hobby/skill that involves being in the moment, focused, problem solving oriented- and all that builds confidence, soothes anxiety, and instills pride in yourself and your home. I did this in my entire house 8 years ago and still have tendinitis in my left elbow from holding the mud pan. Also “dust nightmare” is entirely accurate

Here's a tip from one drywall girly to another... Add a little dawn and some water then mix, don't sand in between - just knock down the ridges. Also, there's a large blade you can screw on to a pole for ceilings. It's much easier. You did great!!!
