Ugh, I've had moldy cheese surprise me mid-dinner prep. So annoying. I have some vegan friends so I've learned a few alternative sauces. The recipe I remake again and again is a parmesan-style sauce. Just need butter, flour, full fat coconut milk (or heavy cream), garlic, nutritional yeast and a few spices. I've used this sauce in vodka pasta when cooking for vegan or dairy-free guests. It's really good.

I would’ve been so mad if I got that far into making vodka pasta and found out my cheese was moldy omg 😭 still looks so good though!!
