@yaidymakes: Kefir Overnight Steel Cut Oats 🫐🥣 #bloodsugarbalance #healthybreakfast 📝Ingredients: For the base: 1 cup steel-cut oats 3 1/3 cups water or unsweetened almond milk (or half and half) 1 large cinnamon stick 1/4 cup chia seeds 1 tsp pure vanilla extract To mix in after cooling: 1 1/3 cups plain probiotic Kefir (or plain full-fat Greek yogurt) 1/4 tsp stevia or monk fruit extract (or to taste) Toppings (per jar/serving): A handful of chopped walnuts 1/4 cup fresh blueberries A dash of ground cinnamon Instructions: 1. In a pot over medium heat, add the almond milk, steel-cut oats, cinnamon stick, and vanilla extract. 2. Bring to a gentle simmer, stirring occasionally so it doesn't stick to the bottom. Cook until the oats absorb the liquid and become creamy but still hold their texture (do not overcook). 3. Remove from the heat, take out the cinnamon stick, and let it cool completely to room temperature. (This is a super important step so the heat doesn't kill the live probiotics in the kefir!). 4. Once at room temperature, stir in the Kefir, chia seeds, and stevia. Mix everything really well. 5. Divide the mixture evenly into 4 airtight glass jars. 6. Add your toppings to each jar: fresh blueberries, chopped walnuts, and a dash of ground cinnamon. 7. Seal the jars and place them in the fridge for at least 4 hours, or preferably overnight. The next morning, you'll have a perfect breakfast ready to enjoy!
