all because my mum would make the best ever  (makes 8x) you’ll need: - 200g full fat cottage cheese - 1 apple - 2 eggs - 2tbsp honey / maple syrup - 1tsp vanilla extract - 3/4 cup (or 3 heaped tbsp) plain flour - 2tsp baking powder - butter for frying (for the blackberry chia jam): - 1 cup fresh / frozen blackberries - 1tsp chia seeds - 1tbsp honey  method: 1. begin by peeling, coring and chopping your apple into 1cm chunks. 2. in a medium sized bowl, add in your cottage cheese, apple cubes, eggs, honey (or maple syrup), vanilla, flour and baking powder. 3. using a fork, mix until thoroughly combined or no lumps of flour remain. 4. in a medium sized saucepan, melt some butter on a medium to low heat. 5. carefully spoon about 2tbsp of pancake batter per pancake into rounds onto the pan (it doesn’t need to be neat!). 6. fry for a few minutes or until golden brown (make sure the heat is not too high as we need them to be cooked all the way through!). 7. meanwhile, in a seperate saucepan - place the blackberries, chia seeds and honey into the pan on a medium heat. 8. add a splash of water to get it going - it should eventually begin to thaw and become a jam! keep stirring and squashing the blackberries as you go (or just pop in the microwave for a couple of minutes!). 9. once the pancakes are golden brown, carefully flip over and fry on the other side for a few minutes.  10. remove from the pan and repeat with the rest of the batter. 11. serve in a stack and top with a generous dollop of greek yogurt. 12. spoon over the warm blackberry jam and finish with a drizzle of honey… enjoy xxx🍎 #breakfast #breakfastrecipes #pancakes #cottagecheese #yogurt
