I owned a restaurant for over 50 years. They are successfully in New York and Texas. We do not do cooking fees for the Chef. You must leave 18 to 20% today for your waiter or waitress of course but anything else is nonsense.

As someone who is a tipper And judges others for not tipping I wouldn’t tip Either in this situation because you’re not about to add a random fee and then expect me to tip as well. I will pay for my food plus add a tip on it, but I’m not gonna pay for my food, a random fee and a tip.
