What developers don't know is that, visitors to the site don't care about UI, they care whether the page can solve the problem they have right now. So, the leaner and straight forward a page looks, the better it is for UX, and easily converts visitors to paying clients. The reason they all look almost like this is because the LLM was trained on a template that was proven to work.... fancy mordern sites as you call it have a lot of noise that distract visitors🙂

This is where knowing HTML, CSS and JS comes in handy. I use AI to just get a template that edit myself. Kinda like how you generate the base HTML skeleton in Visual Studio. It saves me time, I found it's usually better to edit it yourself because I noticed AI loves to use inline CSS, and JS which isn't wrong but it can make the HTML bloated and I personally prefer to use external CSS and JS, because it allows me to reuse them on other pages in the same project, and only do internal and inline when needed for a specific page.
