Welcome to my series: Salads That Actually Taste Good 👌 🥗 First up: one of my favourites — this crispy chickpea and halloumi combo. It’s sweet, slightly spicy, and packed with plenty of greens ✅ Ingredients – Serves 4 (479 calories per serving) 🥗 4 handfuls spinach, roughly chopped 🥒 240g cucumber, finely diced 🥑 1 avocado, roughly chopped 🧅 ¼ red onion, finely diced (soak in water to tone down the flavour) ❤️ 85g pomegranate seeds 🌿 Small bunch of mint & parsley, finely chopped For the crispy chickpeas: 🧆 400g can chickpeas, drained 🌶️ ½ tsp sweet paprika (or to taste) 🧄 ½ tsp garlic powder (or to taste) 🧂 Sea salt, to taste For the honey halloumi: 🧀 250g halloumi, diced 🍯 1 tbsp honey 🌶️ Chilli flakes, to taste 🫒 1 tbsp olive oil For the dressing: 🫒 2 tbsp extra virgin olive oil 🍋 Juice of ½ lemon 🧂 Black pepper & sea salt, to taste (careful — halloumi’s salty!) 🌰 1 tsp tahini (or to taste) 1️⃣ Toss the chickpeas with paprika, garlic powder, and sea salt. Air fry or bake at 200°C for 15 minutes until crispy. 2️⃣ Fry the halloumi in a non-stick pan with a little oil until golden, then add honey and chilli flakes. Cook until sticky and crisp around the edges. 3️⃣ In a small bowl, mix together the olive oil, lemon juice, tahini, a pinch of black pepper, and a little stevia if you like it sweeter.
