Chocolate Truffle Seed Cycle Balls  Ingredients:  - 1 cup pumpkin seeds or sunflower seeds (depending on cycle) - 1 cup flaxseed or sesame seeds (depending on cycle) - 1 cup raw walnuts  - 1 cup cacao or cocoa powder  - 2 cups of pitted medjool dates (about 15-20) - 4 tbsp of nut butter of choice, I used peanut in these - 2 tsp of vanilla extract  - 1/2 teaspoon of salt  Instructions:  1. Grind all your seeds in a coffee grinder or high speed blender 2. To a food processor or high speed blender, add the ground seeds and the remaining ingredients. Process until the mixture is the consistency of sand and easily sticks together when pressed between your fingers. The consistency of the mixture will largely depend on which seeds you’re using and the moistness of your dates. If the mixture is too dry to stick together, add warm water, 1 teaspoon at a time and continue to process until the right consistency is reached.  3. If you don’t have a food processor or high speed blender (like myself) you can break up the dates using your hands and mix the batter together using your hands. Not the most ideal option but it will work.  4. Add some cocoa powder to a plate that will be  used to roll the balls in  5. Using a tablespoon, scoop dough and form into a ball using your hands  6. Roll each ball in the cocoa powder to coat and arrange on a baking sheet  7. This recipe will make between 20-30 balls depending on how big you make them 8. Place in the freezer for about 1 hour, transfer to an airtight container and store in the fridge.
