Ingredients: - 2 cod fillets (each about 150g) - 1 cup brown rice - 2 cups water or vegetable broth (for cooking rice) - 1 red bell pepper, sliced - 1 yellow bell pepper, sliced - 2 cups leafy greens (spinach or kale) - 2 cloves garlic, minced - 1 teaspoon turmeric powder - 1 tablespoon olive oil - 1 tablespoon lemon juice - Salt and black pepper to taste - Fresh parsley for garnish Instructions: 1. Cook the brown rice in water or broth according to package instructions. 2. Preheat oven to 375°F (190°C). 3.
