@heresyourbite: Italian Grinder Pasta Salad 😛 It has all the flavors of an Italian sub sandwich tossed together in pasta salad form: deli meats, sharp provolone, crunchy lettuce, pepperoncini, red onion, parmesan, and a creamy dressing with just enough heat from Calabrian chiles to keep things from feeling one-dimensional. The dressing is tangy, peppery, creamy, and packed with flavor, and the mix of raw and pickled onions gives it that classic deli-style bite without overpowering everything else. And the shredded lettuce might sound simple, but it’s what really brings the whole thing together. It gives you that fresh, crunchy grinder texture in every single bite. Ingredients below, full recipe is in my bio! For the dressing: ¾ to 1 cup mayonnaise 2 tbsp red wine vinegar, to taste 1 tbsp peperoncini brine, to taste 2 garlic cloves, grated 1 tsp dried oregano 1–2 tsp Calabrian chili paste (or red pepper flakes), to taste 1/4 tsp kosher salt, to taste Freshly cracked black pepper, to taste For the pasta salad: 1 lb short pasta (radiatori, gemelli, fusilli, or rotini) 1 tbsp olive oil (to toss pasta) 1/2 head iceberg lettuce, finely shredded 8 oz deli turkey, sliced or chopped 6 oz salami or pepperoni, sliced or chopped 4 oz ham, sliced or chopped 6 oz provolone cheese, cubed 1/2 red onion, very thinly sliced 1/4 cup pickled red onion (optional) 1/2 cup peperoncini, chopped 3/4 cup freshly grated parmesan cheese, plus more to finish Freshly cracked black pepper, to taste #pastasalad #grinderpastasalad #memorialday #italiangrinder #sandwich

I make the pasta salad minus the lettuce so it has time to meld all the flavors together and then when serving it I put a small layer of shredded lettuce on the bottom of the bowl and top with pasta salad. Keeps the lettuce from wilting in the salad and extends the pasta salad shelf life in the fridge. 😁

I make something similar- try putting some of the dressing on the pasta while it’s hot. It soaks in the flavor.
