@tomsculinaryjourney: An Italian Making the Chinese Noodle Dish With Only 4 Ingredients 🧾 Ingredients (2 portions) Scallion Oil -Green scallions: 80g -White part of scallions: 50g -Shallots: 30g -Neutral oil: 90ml -Lard: 30ml Sauce -Light soy sauce: 45ml -Dark soy sauce: 15ml -Sugar: 15g Noodles -Fresh wheat noodles: 250-300g -Salt: a pinch 🍳 Method 1. Slice the green and white parts of the scallions separately. Thinly slice the shallots. 2. Add neutral oil and lard into a cold pan. Add the white scallions and shallots before turning on the heat. Fry slowly over very low heat for 15–20 minutes. 3. Once lightly golden, add the green scallions. Continue frying slowly until everything becomes deep amber brown and crispy. Remove immediately before they burn. 4. Let the oil cool slightly, then add light soy sauce, dark soy sauce, and sugar. The residual heat caramelizes everything gently without burning the sugar. 5. Cook noodles until just barely al dente. Rinse briefly under cold water and drain extremely well. 6. Add a spoon of scallion oil to the bowl first, then the noodles, then 2–3 spoons of sauce. Toss aggressively from the bottom up until every noodle is glossy. 7. Top with the crispy scallions and optionally a fried egg with a runny yolk. the less ingredients there is the harder to hide when you mess up. also try any chilli oil or even dried chillies for that extra flavour or if you want to be extra add in tuna/salmon. it works

I do agree with You. Dishes from China, Japan, Korea, Thailand, Vietnam etc....Sometimes the recipe in its self might not sound anything special... But once you make it and being faithfull to the recipe... WOW the flavours or that dish keep lingering.... 🌹

if you want to up the game, replace the fried shrimps with dried baby scallops instead. which you gotta soak in hot water first, then shredded. then this goes into the oil together with the greens.
