Classic Jam Drops: Ingredients: 1 1/4 cups plain flour ¼ cup cornflour ½ cup caster sugar ½ tsp baking powder Pinch of salt 125g cold butter, chopped 1 egg 1 tsp vanilla Raspberry or strawberry jam Method: Preheat the oven to 170°C fan-forced and line two baking trays with baking paper. Chuck the flour, cornflour, caster sugar, baking powder and salt into a bowl and give it a whisk. Add the cold butter, chopped into small pieces, rub the butter and flour mixture together until a fine crumb forms. Make a well in the centre. Add the egg and vanilla and mix until a soft dough forms. Roll the dough into small balls and place them onto the lined trays. Use your thumb to gently press an indent into the centre of each biscuit. Pop the trays into the fridge for 15–20 minutes to chill. Fill each indent with a little jam. Whack them in the oven for 10–12 minutes, or until the edges are just lightly golden. Leave them to cool on the trays before moving them, as they'll be delicate while they're warm. #jamdrops #EasyRecipe #easybaking #biscuits #homecooking
