Whipped Popcorn Ganache   Here are three tips for whipped ganache success!   1 – add some glucose syrup when you’re heating the cream. This helps stabilise the ganache to reduce the chances of your ganache splitting. Thanks @lozfozbakes!   2 – another magic ratio – 3-parts heated cream to 1-part white chocolate. Eg, if you have 200g of heated cream, then use 66g of white chocolate.    This is a very handy tip for when you’re steeping cream in something that will soak up the cream and leave you with less than you started with.   3 – Start your ganache the day before you need to use it, and chill it in the fridge overnight.    Ingredients - 600ml thickened cream - 1 bag of microwave popcorn - 1 tablespoon of glucose syrup - 66g white chocolate    Method: 1 - Pop your popcorn, following the instructions on the packet. Set aside. 2 - Pour the cream and glucose syrup into a medium saucepan and gently heat on medium/low. Turn off as soon as the cream starts to simmer. 3 - Add about two-thirds of the popcorn and stir through. Place the lid on the saucepan and leave to steep for about 15-20 minutes. 4 - Place a sieve over a bowl and then pour the steeped cream into the sieve. Press as much of the cream out of the popcorn as you can.  5 - Place the used saucepan on a set of scales and pour the strained cream back into the saucepan, taking note of how much the cream now weighs. I ended up with 200g of cream. 6 - Gently reheat the steeped, turning off the heat as it comes to a simmer. 7 - Divide the weight of your cream by 3 (in this example, 200/3 = 66) to work out how much chocolate you need. Place the chocolate in a medium bowl, and then pour the heated cream over the top. Let it sit for 3-4 minutes. 8 - Gently mix the chocolate and cream together until well combined.
