Ingredients: 2.5 lb chuck roast 2 tbsp olive oil 3 large onions, sliced 4 cloves garlic, minced 1¼ cups lager 1 cup beef stock 1 tbsp Worcestershire sauce 1 tbsp whole grain mustard 1 tsp kosher salt (for braising liquid) Seasonings: 2 tsp Morton’s kosher salt 1 tsp dried rosemary 1 tsp dried thyme 2 tsp onion & herb seasoning Directions: 1. Season the chuck roast all over with kosher salt, dried rosemary, dried thyme, and onion & herb seasoning. 2. Set the Instant Pot to sauté. Add the olive oil and brown the roast on all sides until golden. Set aside. 3. Add the minced garlic to the pot and sauté for 30 seconds until fragrant. 4. Add the sliced onions with a pinch of salt. Cook 5–6 minutes until softened, scraping up the sticky bits. 5. Pour in the beer and let it bubble for a couple of minutes. Add the stock, Worcestershire sauce, mustard, and 1 tsp kosher salt, then stir well. 6. Return the roast to the pot. Lock the lid, set to high pressure, and cook for 75 minutes. Natural release for 15 minutes, then vent the rest. 7. Serve and enjoy 💕
