Strawberry swirl cheesecake bars🍓🍰✨                                                                                      Recipe:                                                                                Ingredients Strawberry puree -2 cups strawberries, sliced (330g) -1/3 cup granulated sugar (66g) -2 tsp lemon juice -1/2 Tbsp cornstarch  -1 Tbsp water Crust -1 1/4 cups graham cracker crumbs (155g) -1 Tbsp granulated sugar -1 Tbsp light brown sugar -Pinch of salt -6 Tbsp unsalted butter, melted (85g) Cheesecake -16 oz cream cheese, room temperature  -2/3 cup granulated sugar (132g) -2 eggs, room temperature -1/3 cup sour cream, room temperature (80g) -1 Tbsp all-purpose flour  -2 tsp vanilla -1/8 tsp salt Instructions For the strawberry puree: 1. In a small dish, combine 1/2 Tbsp cornstarch and 1 Tbsp water and set aside.  2. In a medium saucepan, bring strawberries, sugar, and lemon juice to a boil. Reduce heat and simmer for about 10 minutes, stirring occasionally. While simmering, mash the strawberries well.  3. Stir in the cornstarch mixture and cook for about 1-2 minutes, until slightly thickened. 4. Remove from heat and let cool slightly. Transfer to a blender and blend until smooth. Strain through a fine mesh sieve into a bowl and set aside. For the crust: 1. Line an 8×8-inch pan with parchment paper. 2. Mix graham cracker crumbs, granulated sugar, brown sugar, and salt. Add melted butter and stir until evenly coated. It should look like damp sand. 3. Pour the crumb mixture into the pan and press down gently and evenly. Set aside. For the cheesecake: 1. In a large bowl, beat the cream cheese until smooth. 2. Add sugar and beat until smooth and creamy. 3. Add the eggs and mix until combined. 4. Add sour cream, flour, vanilla, and salt. Mix until just combined. Assembly: 1. Preheat oven to 350°F.  2. Pour the cheesecake filling over the crust. 3. Spoon dollops of strawberry puree over the top and gently swirl with a toothpick or knife. 4. Bake 29-34 minutes, or until the edges are slightly puffed and the center still has a slight wobble. If it starts browning, cover with aluminum foil. 5. Let cool for 1 hour at room temperature, then refrigerate for at least 6 hours or overnight until chilled and set. 6.
