Thinly slice your onion and peppers, and add to the bowl with your fish. Thinly julienne your cilantro leaves and add them as well. Season everything with a generous pinch of salt. 3) Add the lime juice from your 4 limes, your aji amarillo paste, and your ginger, finely grated. Stir everything to mix evenly. Vacuum seal your bowl using your ZWILLING smart-vacuum pump, or cover your ceviche with plastic wrap in tight contact with its surface. 4) Put your ceviche in the fridge for 20-30 minutes, or until the fish begins to firm up and becomes white in colour. 5) While you it fish is cooking in the fridge, heat your oil in a large, heavy bottom pot to 300 degrees F. Peel and thinly slice your sweet potatoes as thin as you can without the slices breaking. Approx 1mm thin. Fry your chips 15-20 at a time until you stop seeing bubbles released from the chips in the oil (this means all the moisture has been released, and the chips are crispy enough to take out of the oil!). Transfer your chips to a tray lined with paper towel, and season with sea salt. 6) When your fish is "cooked", plate up your ceviche with your chips and enjoy!
